Abstract£º
Introduction
The nutrients labeling of livestock products are to comply with the Standards for labeling
livestock products. Customers usually buy goods with nutrients fortification about its
composition labeled on package material. But, there are little studies on the analysis of such
items which have the same quantities with the labeling or not. On these grounds, we would
study Calcium and fructo-oligosaccharides in dairy products consistent with its nutrients
fortification labeling.
Materials and Methods
Samples were dairy products, purchased in warehouse stores in Anyang city, labeled Cacium
or/and fructo-oligosaccharides fortified. Calcium was analyzed according to the Regulation of
Livestock products processing standards and ingredient specifications. Samples were prepared
in Microwave digestion method and analysed
using Inductively-coupled plasma optical
emission spectrometry(ICP-OES) in inorganic test method.
Test method also validated by analyzing infant formula 1849 standard reference material
provided by the National Institute for Standards and Technology and by attending the
proficiency test(FAFAS).
Furcto-oligosaccharides was tested with use of HPLC-ELSD. Major targets of
fructo-oligosaccharides were 1-kestose, nystose and 1F-B-frutofuranosylnystose which were
commonly used in goods and raffinose, also usually added in products.
Results
Analyzed calcium contents varied with 1.0-2.4 mg/g (milk products), 0.3-1.6 mg/g (fermented
milk products), and 4.2-23 mg/g (cheeses). Compared to labeled quantities, test results were
87¢¦123% higher or lower in milk products, 89¢¦131% higher or lower in fermented milk
products and 83¢¦120%
